Hearty Breakfast Sandwich from Modern Crumb

  1. Preheat oven to 350.
  2. Tear off 6 square pieces of aluminum foil.  Cut the English muffins in half and toast them lightly in the toaster, then set them open faced on the foil.  Place a piece of ham on one side of every English muffin.
  3. Cook the eggs over easy plus extra time, so the yolk is firm around the edges.   Place an egg on top of the ham, followed by the cheese.  Put the other half of the English muffin on top.
  4. Wrap the breakfast sandwiches up in the foil. Place the sandwiches on a baking sheet.
  5. Bake in the oven for 10 minutes or until the cheese is melty.

  • 6 slices Colby jack cheese
  • 6 thick slices of ham, bacon or Canadian bacon
  • Salt & pepper
