  1. Melt butter, blend in flour and add milk and seasonings. Cook until thickened, stirring constantly.
  2. Dip eggs into the sauce, cool and roll in bread crumbs.
  3. Fry in hot deep fat (375º) until brown.
  4. Drain on paper towel.
  5. Serve with tomato sauce or salsa.

  • 2 tablespoons butter
  • 4 tablespoons flour
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • 1/8 teaspoon pepper
  • 6 hard-cooked Hickman’s eggs
  • bread crumbs
