Green Chile Egg Salad Sliders

  1. Place eggs, celery, green chiles, red onion, mustard and mayonnaise in a large bowl. Season with salt and pepper, and gently stir until well incorporated. Fill each slider bun with 1/2 cup egg salad. Serve and enjoy!
Ingredients
  • 6 Large Hickman's Eggs, hard-boiled, peels and chopped
  • 2 celery stalks, finely chopped
  • 1 can diced green chiles
  • 1/4 cup red onion, finely chopped
  • 1 Tbsp Dijon mustard
  • 1 Tbsp mayonnaise
  • 1 tsp salt
  • 1 tsp black pepper
  • 6 slider buns
