How Eggs Are Hard Cooked at Hickman's

The eggs are loaded on the rollers manually with suction cups. No hands touch the eggs directly. All personnel working must wear gloves.
The rollers take the eggs upward to the boiler; once in the boiler it takes 18 minutes to cook the eggs. The eggs roll out of the boiler into cool water, where it takes 10 minutes to cool the hard-cooked eggs.

The eggs are pushed onto the rollers with water pressure, and rolled upward onto the peeler for peeling. After the eggs are peeled, the final product is rolled out peeled and clean. The eggs roll on a conveyor towards a bucket with a plastic bag or liner.

Each bucket holds an average of 203 boiled eggs.
